Resumen:

Foodborne pathogens are a significant burden in terms of public health, as well as economic and social issues throughout the world. Although the prevention of food contamination through good hygiene, agricultural, and manufacturing practices remains the main strategy to follow, the use of polymers and biopolymers in food applications is a promising alternative to help to avoid and reduce such problems in a more effective way. However, with the rise of nanotechnology in food, chitosan-based nanosystems by themselves or by associating/encapsulating natural compounds have improved or enhanced their antimicrobial activity. Therefore this review summarizes the antimicrobial properties of chitosan and chitosan-based nanosystems on important food pathogens. © 2023 Elsevier Inc. All rights reserved.
